Recipe for BBQ Pulled Chicken Lettuce Wraps

This recipe for BBQ pulled chicken lettuce wraps is delicious and so easy to make. It’s perfect to make for lunch with the girls or a family dinner on the patio. 

This base recipe will feed 2 hungry adults, but you can easily multiply this recipe to feed a crowd. Add some sides for a complete meal.

If you’re having guests over for a summer potluck, you can even cook it in a crockpot. Then serve all the toppings on the side for guests to make their own.

Even though there’s just the two of us, I grew up in a big family with 6 kids, so I love recipes like this that are super flexible and can be customized to suit many different tastes- perfect for a big family.

Here’s what you’ll need:

1 head of romaine lettuce (butter lettuce works too)

Bbq sauce 

1 lb chicken breast (mine was 1.25 lb)

½ onion

Cayenne

Garlic powder

Salt & pepper

Optional toppings: corn, black beans, shredded cheese, avocado slices

Recipe for BBQ Pulled Chicken

Season chicken with salt, pepper, cayenne, and garlic powder. Use less cayenne if you don’t like spicy food, or more if you do. I usually just eye the amount of spices and try to sprinkle them evenly over the chicken.

Roughly chop the onion. You don’t want huge pieces, because they’ll combine with the chicken when you shred it.

Bake at 375℉  for 30-40 minutes, until the internal temp reaches 165˚F (74˚C). If you’re crunched for time you can use chicken tenders or cut the chicken breasts in half. 

When you take the chicken out, let it cool for at least 5 minutes.

Now it’s time to shred the chicken. Use forks to shred the chicken right in the baking dish or toss the chicken and onions in the bowl of a stand mixer with a paddle attachment and turn it on low to shred the chicken.

Coat with your desired amount of bbq sauce, mixing to coat chicken. I prefer a light, even coating but use as much as you like. Remember you can always add more.

I used D.B. Yummers BBQ Sauce, but my family also really likes Sweet Baby Rays.

Spoon chicken mixture onto lettuce leaves and serve immediately.

Recipe Tips:

You could use a rotisserie chicken to save on cook time.

If you cook the chicken and onion in a slow cooker, you can add the bbq sauce right in there and let everyone make their own lettuce wraps. Use about one chicken breast per person.

These would also be tasty topped with corn, black beans, shredded cheese, or avocado slices.

If you aren’t a fan of lettuce wraps you can use hamburger buns as well.

Serve with garlic roasted green beans or this berry salad for a filling meal.

Ingredients
  

  • 1 lb Chicken Brest approximately 2 large
  • 1/2 Medium Onion
  • Cayenne
  • Garlic Powder
  • 1/3 cup BBQ Sauce
  • 1 head Romain Lettuce or butter lettuce
  • salt & pepper

Optional

  • 1/2 cup corn
  • 1/2 cup black beans
  • 1/4 cup shredded cheese
  • 1 avacado

Instructions
 

  • Spray a baking dish with cooking oil.
  • Add chicken breasts and season with salt, pepper, cayenne, and garlic powder.
  • Roughly chop onion, then add to baking dish.
  • Bake at 375° for 30-40 minutes.
  • Let cool for at least 5 minutes.
  • While chicken cooks, prep lettuce leaves by rinsing and separating.
  • After chicken has rested, shred it with forks (or mixer).
  • Coat with bbq sauce, adding to desired taste, and mix to coat.
  • Spoon onto lettuce leaves.
  • Optional – Add any additional toppings.
  • Serve and enjoy!
