For as long as I can remember, my mom made meatloaf cups instead of a whole loaf. With mini meatloaf muffin cups this go-to dinner was simple and convenient for a busy family.
This worked out really well with us 6 kids since they are so easy to portion out and they cook quicker than an actual loaf.
I like how versatile this recipe is. I often change up the seasonings depending on what we have on hand. But for this recipe, I’ve included my most-used herbs and seasonings.
My mom usually used ground beef, so you can use it instead of ground turkey. I like that ground turkey has less grease, but since it’s not as flavorful I tend to go more generous with the seasonings.
You can easily double this recipe to serve a crowd. And it pairs well with green beans, a salad, or mashed sweet potatoes.
Ingredients You’ll Need:
- 1 lb ground turkey
- ½ bell pepper, chopped
- 1 egg
- ¾ C. French Bread crumbles (any bread, or bread crumbs)
- 1 Tbs mustard
- 1 Tbs Ketchup
- ½ Tbs Minced Onion
- ¼ tsp Garlic Pepper
- ⅛ tsp ground Cayenne Red Pepper
- ⅛ tsp Turmeric
- 2-3 sprigs of fresh thyme
- additional ketchup (optional)

Prep:
Preheat your oven to 350℉
Line your cupcake pan with silicone baking cups or oil each cup. You can spray each cup with cooking spray or just use olive oil and a brush.

I really like using the silicone baking cups because the meatloaf cups pop out so much easier. I do still add a little oil, but I don’t have to use as much or worry about missing a spot.
Mix all your ingredients together in a medium-sized mixing bowl until combined.

Spoon the mixture into your prepared cupcake pan. Use a cookie scoop to make this step really quick and easy. If you don’t have a cookie scooper, spoons work well too.
Optional: Top each meatloaf muffin with a teaspoon of ketchup.

Cook the Mini Meatloaf Muffins:
Bake at 350℉ for 30-40 minutes. (You want the internal temp to get to 165℉.)

Serve with your favorite sides for a complete meal. You may enjoy these garlic roasted green beans or this yummy berry salad.
Refrigerate any leftovers.

Sneak in some extra veggies by adding spinach or kale.
