This breakfast wrap is an easy recipe to whip up in the morning when you’re short on time but need something more substantial than a protein shake.
When I have more time on the weekends I love making these Pumpkin Swedish Pancakes!
You can make a bunch of these wraps all at once and refrigerate or freeze them for later.
I just use a regular skillet but you could absolutely make a bunch at once on a griddle.
Ingredients for one wrap:
- One small tortilla
- A slice of turkey bacon
- One egg
- Shredded cheddar cheese – about 1 Tablespoon
Heat tortilla for 10 seconds on each side in your skillet or you could wait and heat it in the microwave according to the package directions.

Cook the turkey bacon over medium heat to desired crispness and remove to a paper towel.
Add olive oil or a dab of butter to your pan.
Add your egg and fry it in your pan. Sprinkle with desired salt and pepper.

Flip egg to cook other side and sprinkle with cheese while the egg finishes cooking through.

This gives the cheese time to melt and get all gooey.
Remove your cooked egg with cheese to the tortilla, add your slice of turkey bacon, roll up and enjoy!

Easy Breakfast Wrap Recipe Notes:
I love how easy these breakfast wraps are to make!
You could easily make a couple or eat with an apple or cup of yogurt for a more filling breakfast.
If you only have the larger tortillas on hand then you can scale this recipe by filling it with two eggs, two strips of turkey bacon and 2 tablespoons of cheese.
Full disclosure- I don’t usually measure the cheese. I just sprinkle on until it looks like enough.
You could easily use regular bacon, but then you have to deal with more grease and I find that it takes a little longer to get the crispiness that I like.
